  • 1 lb lean ground beef
  • 1 tablespoon olive oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 packet (1 oz) taco seasoning mix (or 2 tsp chili powder, 1 tsp cumin, 1/2 tsp paprika, 1/4 tsp garlic powder, 1/4 tsp onion powder, and a pinch of cayenne)
  • 1/2 cup water or beef broth
  • 1 bag (10-12 oz) sturdy tortilla chips
  • 2 cups shredded cheese cheddar, Monterey Jack, or a Mexican blend

  • Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper.
  • Heat olive oil in a skillet, then add chopped onion and cook until softened. Stir in minced garlic and cook for one minute until fragrant.
  • Add ground beef to the skillet, break it up, and cook until fully browned and no longer pink.
  • Carefully drain excess fat, then stir in taco seasoning and water/broth. Simmer for 2-3 minutes until most liquid is absorbed.
  • Spread half of the tortilla chips on the baking sheet, then layer with half of the seasoned beef and half of the shredded cheese. Repeat with the remaining chips, beef, and cheese.
  • Bake in the preheated oven for 8-12 minutes, or until the cheese is melted and bubbly and the chips are slightly golden.
  • Carefully remove the nachos from the oven.
  • Garnish with your favorite fresh toppings and serve hot.

Notes

For extra crispiness, try to avoid overcrowding the baking sheet. If you want to make it spicier, add a pinch more cayenne pepper to your taco seasoning or use extra jalapeños.
