Ingredients
  

Crust

  • 1.5 cups graham cracker crumbs (about 12-15 full sheets, finely crushed)
  • 0.5 cup unsalted butter melted

Topping

  • 1 can sweetened condensed milk (14-ounce)
  • 2 cups shredded sweetened coconut
  • 0.5 cup good quality raspberry jam (or preserves, adjust to your desired fruitiness)
  • 1 cup white chocolate chips Optional: adds an extra layer of sweetness and creaminess

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper, leaving an overhang.
  • Combine graham cracker crumbs and melted butter, then press firmly and evenly into the bottom of the prepared pan.
  • Sprinkle shredded coconut evenly over the crust, followed by white chocolate chips if using.
  • Dollop spoonfuls of raspberry jam over the coconut layer.
  • Pour the entire can of sweetened condensed milk evenly over the layers, ensuring it covers as much of the top as possible.

Baking and Cooling

  • Bake for 25-30 minutes, or until edges are golden brown and the center is set and slightly bubbly.
  • Remove from oven and cool completely in the pan on a wire rack for at least 2-3 hours, or chill in the fridge.
  • Once chilled and firm, use the parchment overhang to lift bars, then slice into squares or rectangles and enjoy.

Notes

For easier cutting, make sure the bars are thoroughly chilled before slicing. You can also experiment with other jam flavors like apricot or strawberry for a different twist, or add a sprinkle of toasted pecans for extra crunch.
