  • 1 medium butternut squash approximately 2-3 lbs
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon chili powder optional
  • ½ teaspoon dried thyme
  • Salt and freshly cracked black pepper to taste

Optional Glaze

  • 1 tablespoon maple syrup or brown sugar
  • 1 teaspoon apple cider vinegar

Instructions
 

Preparation

  • Peel the butternut squash, halve it, and scoop out the seeds.
  • Slice the squash into ½ inch thick crescent or wing-like shapes.

Seasoning

  • In a large bowl, toss the butternut squash with olive oil.
  • Evenly season with smoked paprika, garlic powder, onion powder, chili powder, thyme, salt, and pepper.

Glaze (Optional)

  • If using, gently brush or drizzle the maple syrup/brown sugar and apple cider vinegar mixture over the seasoned squash.

Roasting

  • Preheat your oven to 400°F (200°C) and arrange squash on a baking sheet in a single layer.
  • Roast for 20-30 minutes, turning halfway through, until tender and caramelized.

Notes

For extra crispiness, ensure the squash is in a single layer and not overcrowded on the baking sheet.
