Ingredients
  

Patties

  • 1.5 lbs Ground Beef (80/20 lean to fat ratio)
  • 0.5 medium Onion (1/2 for patties)
  • 2 cloves Garlic (2 for patties)
  • 0.5 cup Breadcrumbs (Panko or regular)
  • 1 large Egg
  • 1 tablespoon Worcestershire Sauce (1 for patties)
  • 1 teaspoon Dijon Mustard (1 for patties)
  • 0.5 teaspoon Salt (approx. 1/2 teaspoon for patties)
  • 0.25 teaspoon Black Pepper (approx. 1/4 teaspoon for patties)

Gravy

  • 0.5 medium Onion (1/2 for gravy)
  • 2 cloves Garlic (2 for gravy)
  • 2 tablespoons Worcestershire Sauce (2 for gravy)
  • 1 teaspoon Dijon Mustard (1 for gravy)
  • 3 cups Beef Broth (low-sodium)
  • 0.25 cup All-Purpose Flour
  • 2 tablespoons Butter or Olive Oil
  • Salt To taste
  • Black Pepper To taste

Garnish

  • 2 tablespoons Fresh Parsley (optional), chopped

Instructions
 

Patties

  • In a large bowl, combine ground beef with half the diced onion, minced garlic, breadcrumbs, egg, 1 tbsp Worcestershire sauce, 1 tsp Dijon mustard, salt, and pepper.
  • Mix gently until just combined, then form into 4-6 oval patties, about 3/4 inch thick, with a small indentation in the center.

Sear Patties

  • Heat a large skillet with 1 tbsp butter or oil over medium-high heat. Sear patties for 3-4 minutes per side until browned but not cooked through.
  • Remove patties from skillet and set aside.

Gravy Base

  • Reduce heat to medium. Add remaining diced onion and 1 tbsp butter or oil to the skillet, cooking for 5-7 minutes until softened and translucent.
  • Add remaining minced garlic and cook for another minute until fragrant.

Thicken Gravy

  • Sprinkle flour over onions and garlic, stirring constantly for 1-2 minutes to cook out the raw flour taste and form a roux.

Build Gravy

  • Gradually whisk in beef broth until smooth. Stir in remaining 2 tbsp Worcestershire sauce and 1 tsp Dijon mustard.
  • Bring gravy to a simmer, stirring occasionally, until it thickens to your desired consistency. Season with salt and pepper to taste.

Simmer Steaks

  • Return seared patties to the skillet, nestling them into the gravy.
  • Reduce heat to low, cover, and simmer for 15-20 minutes until patties are cooked through and tender.

Serve

  • Garnish with fresh parsley, if desired, and serve hot.

Notes

Make sure not to overmix the ground beef mixture for tender patties. An indentation in the middle of the patties helps them cook evenly and prevents them from bulging. When making the gravy, gradually add the beef broth to ensure a smooth consistency without lumps. You can adjust the amount of Worcestershire sauce and Dijon mustard in the gravy to suit your taste preferences. If the gravy becomes too thick, you can add a little more beef broth or water to reach your desired consistency. This dish pairs wonderfully with mashed potatoes or egg noodles to soak up the delicious gravy.
