Ingredients
  

Main Ingredients

  • 1 tbsp olive oil
  • 1 lb large shrimp, peeled and deveined fresh or frozen, thawed
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • Salt and freshly ground black pepper to taste
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper any color, deseeded and chopped
  • ½ cup cherry tomatoes, halved optional, but adds a pop of sweetness
  • ¼ cup chicken or vegetable broth
  • 2 tbsp fresh parsley, chopped for garnish
  • Red pepper flakes to taste (for a little heat, optional)

Instructions
 

Preparation

  • Thaw and pat dry frozen shrimp, then season with smoked paprika, garlic powder, salt, and pepper.

Cooking

  • Heat olive oil in a large skillet over medium-high heat.
  • Add seasoned shrimp to the hot skillet, cooking for 1-2 minutes per side until pink and opaque. Remove shrimp and set aside.
  • In the same skillet, add more oil if needed, then sauté chopped onion for 3-4 minutes until softened. Add minced garlic and chopped bell pepper, cooking for another 3-5 minutes until tender-crisp.
  • Pour in broth and cherry tomatoes (if using), scraping up any browned bits from the bottom of the pan.

Finishing and Serving

  • Return cooked shrimp to the skillet and gently toss to heat through and coat in the sauce.
  • Garnish with fresh parsley and red pepper flakes if desired, and serve immediately.

Notes

This recipe is easily adaptable to your preferred vegetables. Feel free to add spinach, zucchini, or mushrooms for extra flavor and nutrients.
