Classic Shrimp Scampi

This classic shrimp scampi recipe features succulent shrimp bathed in a rich garlic-lemon butter sauce, perfect for a quick and elegant meal. It's incredibly flavorful and comes together in less than 30 minutes.

  • 1 ½ pounds large shrimp, peeled and deveined, tails on or off
  • ½ cup unsalted butter, divided
  • 2 tablespoons olive oil
  • 6-8 cloves garlic, minced
  • ½ cup dry white wine (like Pinot Grigio or Sauvignon Blanc) OR chicken/vegetable broth
  • 2 tablespoons lemon juice
  • ¼ cup fresh parsley, chopped
  • ½ teaspoon red pepper flakes optional
  • Salt to taste
  • Freshly ground black pepper to taste

Preparation

  • Pat the peeled and deveined shrimp dry with paper towels and season them lightly with salt and pepper.
  • In a large skillet over medium heat, melt 2 tablespoons of butter with the olive oil.
  • Add the minced garlic and optional red pepper flakes, cooking for about 1 minute until fragrant, being careful not to burn the garlic.

Cooking

  • Increase the heat to medium-high and add the shrimp to the skillet in a single layer, cooking for 1-2 minutes per side until pink and opaque.
  • Remove the cooked shrimp and set aside, cooking in batches if necessary to avoid overcrowding.
  • Pour the white wine or broth into the hot skillet, bring to a simmer, and scrape up any browned bits from the bottom of the pan, reducing for 1-2 minutes.
  • Remove the skillet from the heat, stir in the remaining ¼ cup of butter until melted, then add the lemon juice and fresh parsley.
  • Return the cooked shrimp to the skillet and toss gently to coat in the sauce, checking and adjusting seasoning as needed. Serve immediately.

Notes

For extra flavor, you can marinate the shrimp in a little olive oil and garlic a few minutes before cooking. Serve over pasta, rice, or with crusty bread to soak up the delicious sauce!
