  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 1 medium yellow onion chopped
  • 8 ounces cremini mushrooms sliced
  • 2 cloves garlic minced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth low sodium
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • ½ cup sour cream full-fat
  • Salt and freshly ground black pepper to taste
  • 12 ounces egg noodles
  • Fresh parsley chopped (for garnish)

  • Cook egg noodles in a large pot of salted boiling water until al dente, then drain and set aside.
  • Brown the ground beef in a skillet with olive oil, breaking it up until cooked; drain excess grease and set aside.
  • Sauté chopped onion until soft, then add sliced mushrooms and cook until browned; stir in minced garlic for one minute.
  • Sprinkle flour over the onion and mushroom mixture, stirring for 1-2 minutes to cook off the raw taste.
  • Gradually whisk in beef broth, Worcestershire sauce, and Dijon mustard; simmer until the sauce thickens slightly.
  • Add cooked ground beef back to the skillet, reduce heat to low, and stir in sour cream until just combined; season with salt and pepper.
  • Serve the stroganoff immediately over egg noodles, garnished with fresh parsley if desired.

Notes

To prevent the sour cream from curdling, ensure the heat is on low before stirring it into the sauce and do not bring the sauce to a boil afterwards.
