Classic Simple Shrimp Stir-Fry Dinner

This classic shrimp stir-fry is a quick and easy weeknight meal packed with fresh vegetables and flavorful shrimp, all coated in a savory sauce. It's perfect served over rice or noodles.

Ingredients
  

Main Ingredients

  • 1 pound raw shrimp peeled and deveined
  • 1 head broccoli cut into small florets
  • 1 bell pepper any color, sliced
  • 1 cup snap peas
  • 2 carrots julienned
  • 3-4 cloves garlic minced
  • 1 tablespoon fresh ginger grated

Stir-Fry Sauce

  • ¼ cup low-sodium soy sauce
  • ¼ cup chicken or vegetable broth
  • 1 tablespoon cornstarch
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or maple syrup optional

Cooking Oil & Garnish

  • 1-2 tablespoons cooking oil canola, vegetable, or peanut
  • sesame seeds optional garnish
  • sliced green onions optional garnish
  • red pepper flakes optional garnish

Instructions
 

Preparation

  • Chop all vegetables and mince the garlic and ginger.
  • Whisk together soy sauce, broth, cornstarch, sesame oil, rice vinegar, and optional honey in a small bowl to create the stir-fry sauce.

Cooking

  • Heat 1 tablespoon of cooking oil in a large wok or skillet over high heat.
  • Add the shrimp and stir-fry for 2-3 minutes until they turn pink and are fully cooked, then remove them from the pan and set aside.
  • If needed, add another 1/2 tablespoon of oil to the pan, then add minced garlic and grated ginger and stir-fry for about 30 seconds until fragrant.
  • Add broccoli and carrots to the pan and stir-fry for 2-3 minutes until tender-crisp.
  • Introduce bell pepper and snap peas to the pan and continue to stir-fry for another 1-2 minutes.
  • Return the cooked shrimp to the pan with the vegetables, give the prepared sauce a quick stir, and pour it over the ingredients.
  • Stir continuously for 1-2 minutes until the sauce thickens and evenly coats the shrimp and vegetables.

Serving

  • Remove the stir-fry from heat and serve hot over rice or noodles.
  • Garnish with sesame seeds, green onions, or red pepper flakes as desired.

Notes

For extra heat, add a pinch of red pepper flakes with the garlic and ginger. You can customize the vegetables based on what you have on hand or prefer, such as mushrooms, water chestnuts, or baby corn.
