  • 1-2 tablespoons olive oil

  • Pat the chicken thighs dry and season both sides generously with salt, pepper, garlic powder, and paprika.
  • Heat 1 tablespoon of olive oil in a large, oven-safe skillet over medium-high heat.
  • Place chicken thighs skin-side down in the hot skillet, pressing gently for full contact; cook in batches if needed.
  • Sear for 8-12 minutes until the skin is deeply golden brown and very crispy, pouring off excess fat as needed.
  • Flip the thighs, then immediately transfer the skillet to a preheated oven at 400°F (200°C).
  • Bake for 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
  • Remove chicken to a cutting board and let it rest for 5-10 minutes to redistribute juices.
  • Garnish with fresh lemon wedges for serving.

Notes

For extra crispy skin, ensure the chicken is very dry before seasoning. Do not overcrowd the pan for best searing results.
