Ingredients
  

Snowman Base

  • 2 8-ounce logs soft goat cheese (chèvre)
  • 1 8-ounce block block cheddar cheese
  • 1 8-ounce block block colby jack cheese
  • 1 4-ounce fresh mozzarella ball or small Camembert wheel

Meats

  • 4 ounces cured salami, thinly sliced
  • 4 ounces prosciutto

Decorations & Garnish

  • 1 baby carrot
  • 10-12 black olives or blueberries
  • 1/4 red bell pepper, sliced into thin strips
  • 3-4 fresh rosemary sprigs
  • 1/4 cup fresh cranberries or pomegranate arils

Accompaniments (Optional)

  • 1 box assorted crackers
  • 4-5 pretzel rods
  • Small bowls of fig jam, honey, or spicy mustard for serving. Optional

Instructions
 

Preparation

  • Select a large serving board for constructing your snowman charcuterie board.
  • Form the snowman's body by molding two-thirds of one goat cheese log into a large ball for the base and the remaining into a smaller middle section. Use the mozzarella or Camembert for the head, placing it on top of the middle section.

Arrangement

  • Arrange folded salami and rolled prosciutto around the cheese snowballs. Fill gaps with sliced cheddar and Colby Jack cheeses to create a full appearance.
  • Create facial features for the snowman using a sliced baby carrot for the nose and black olives or blueberries for the eyes and mouth.

Garnish & Serve

  • Accessorize the snowman with a red bell pepper scarf and rosemary sprig or pretzel rod arms. Scatter cranberries or pomegranate arils around the board for festive color.
  • Fan out crackers and pretzel rods around the snowman, and optionally add bowls of fig jam, honey, or spicy mustard. Serve immediately at room temperature.

Notes

For best flavor, serve this charcuterie board at room temperature. Feel free to customize with your favorite cheeses and cured meats. You can use cookie cutters to make festive shapes from the block cheeses.
