  • 1 tablespoon unflavored gelatin powder
  • 1/4 cup cold water
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract

Preparation

  • Puree hulled strawberries in a blender until smooth, then taste and stir in granulated sugar as needed.
  • Sprinkle gelatin powder over 1/4 cup cold water in a small bowl, letting it sit for 5 minutes to bloom or soften.
  • Gently heat the bloomed gelatin until dissolved and clear, then immediately stir it into the strawberry purée.
  • In a large, chilled bowl, beat heavy whipping cream with vanilla extract and a pinch of salt until soft peaks form.
  • Gently fold the strawberry-gelatin mixture into the whipped cream until just combined, being careful not to deflate the cream.
  • Spoon the mousse into individual serving dishes or a large bowl and refrigerate for at least 3-4 hours, or until thoroughly set.

Notes

For an even smoother mousse, strain the strawberry puree. Ensure the gelatin is fully dissolved but not boiling before mixing it into the puree. Chilling time is crucial for the mousse to set properly, so plan accordingly.
