Classic Strawberry Scones with a Hint of Vanilla

These classic strawberry scones, subtly flavored with vanilla, are a perfect treat for any time of day. They are simple to make and yield a tender, flaky result with bursts of fresh strawberry.

Ingredients
  

Dry Ingredients

  • 2 cups All-purpose flour
  • 1/4 cup Granulated sugar
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Salt

Wet Ingredients & Add-ins

  • 1/2 cup Unsalted butter very cold, cubed (1 stick)
  • 1 cup Fresh strawberries diced
  • 1/2 cup Heavy cream or whole milk full-fat recommended
  • 2 tablespoons Heavy cream or whole milk for brushing
  • 1 teaspoon Vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Mixing

  • In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  • Add the cold, cubed butter and cut it into the dry ingredients until it resembles coarse crumbs with some pea-sized pieces.
  • Gently fold in the diced fresh strawberries.
  • In a separate bowl, whisk 1/2 cup heavy cream (or milk) and vanilla extract, then pour this into the dry ingredients.
  • Mix gently with a fork or hands until just combined, being careful not to overmix the shaggy dough.

Shaping and Baking

  • Turn the dough onto a lightly floured surface and pat it into an 8-inch circle, about 1-inch thick, or a rectangle.
  • Cut the dough into 8 wedges or rounds using a sharp knife or cookie cutter.
  • Place the scones on the prepared baking sheet, leaving space between them, and brush the tops with the remaining 2 tablespoons of cream or milk.
  • Bake for 15-20 minutes until golden brown and a wooden skewer inserted into the center comes out clean.
  • Transfer the baked scones to a wire rack to cool slightly before serving.

Notes

For best results, ensure all ingredients, especially the butter and cream, are very cold. This helps create flaky scones. Do not overmix the dough, as this can lead to tough scones.
