  • 6-8 slices day-old bread sourdough, challah, or basic white bread work well
  • 8 large eggs
  • 2 cups whole milk or half-and-half for extra richness
  • 1 cup cooked and crumbled breakfast sausage, ham, or bacon your choice!
  • 1.5 cups shredded cheddar cheese or a blend like Colby Jack
  • 1/2 cup chopped bell pepper any color
  • 1/4 cup chopped onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1 tablespoon butter, melted for greasing the dish

Preparation

  • Tear or cut the bread into 1-inch cubes and spread them evenly in a generously buttered 9x13 inch baking dish.
  • Sprinkle the cooked meat, chopped bell pepper, and onion over the bread cubes, then distribute 1 cup of shredded cheese evenly.
  • In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and paprika until thoroughly combined.
  • Pour the egg mixture over the contents of the baking dish, ensuring the bread is well saturated by gently pressing down any floating pieces.
  • Cover the baking dish tightly with plastic wrap and refrigerate for at least 8 hours, or preferably overnight (up to 24 hours), to allow flavors to deepen.

Baking

  • The next morning, preheat your oven to 375°F (190°C) and let the casserole sit out for 15-20 minutes to reduce the chill.
  • Uncover the casserole and sprinkle the remaining 1/2 cup of shredded cheese over the top.
  • Bake for 45-60 minutes, or until the casserole is set in the center, puffed, and golden brown; an inserted knife should come out clean.
  • Let the casserole rest for 5-10 minutes before slicing and serving to allow it to firm up slightly.

Notes

For an even richer flavor, consider using challah bread. If you prefer a vegetarian option, simply omit the meat and add extra vegetables like sautéed mushrooms or spinach.
