Ingredients
  

Chicken

  • 2-3 lbs boneless, skinless chicken breasts or thighs

Marinade

  • 1/4 cup olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

Preparation

  • If using chicken breasts, pound them to an even thickness and pat all chicken pieces dry.
  • Combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper in a dish or bag, then add chicken and marinate for 30 minutes at room temperature, or up to 4 hours refrigerated.

Grilling

  • Preheat your grill to medium-high heat (400-425°F/200-220°C), clean the grates, and lightly oil them.
  • Place chicken on the oiled grates and grill for 5-7 minutes per side, without moving it too much.
  • Check for doneness by inserting a meat thermometer into the thickest part; it should read 165°F (74°C).

Serving

  • Remove chicken from the grill, place on a cutting board, tent with foil, and let rest for 5-10 minutes.

Notes

For extra flavor, you can add a pinch of red pepper flakes to the marinade. Ensure your grill is properly preheated for the best sear on the chicken.
