  • 1 cup corn fresh or frozen (thawed)
  • 1 bell pepper any color, chopped
  • lemon for juice and zest
  • ¼ cup fresh herbs chopped (e.g., parsley, basil, cilantro)
  • Salt and black pepper to taste
  • ½ teaspoon red pepper flakes optional

For Creamy Herb Finish (Upgrade 1)

  • 2 ounces cream cheese softened
  • 2 tablespoons fresh dill chopped

For Mediterranean Twist (Upgrade 2)

  • ½ cup Kalamata olives pitted and halved
  • ¼ cup feta cheese crumbled

For Spicy Mango Salsa (Upgrade 3)

  • 1 ripe mango diced
  • 2 tablespoons red onion finely minced
  • ½ jalapeño (or more, to taste), seeded and minced
  • 1 tablespoon cilantro chopped
  • ½ lime for juice

Instructions
 

Preparation

  • Pat shrimp dry and season with salt, pepper, and optional red pepper flakes. If using the Spicy Mango Salsa upgrade, add a squeeze of lime juice and chili powder to the shrimp now.

Cooking

  • Heat olive oil in a large skillet over medium-high heat, then sauté minced garlic for 30 seconds until fragrant.
  • Add bell pepper, zucchini, and cherry tomatoes; sauté for 5-7 minutes until tender-crisp, adding corn during the last 2 minutes.
  • Push vegetables aside, add seasoned shrimp in a single layer, and cook for 2-3 minutes per side until pink and opaque.
  • Squeeze lemon juice over the dish and stir in fresh herbs.

Upgrades (Optional)

  • For Creamy Herb Finish: Reduce heat, add softened cream cheese, and stir gently until it forms a sauce, then mix in fresh dill.
  • For Mediterranean Twist: Stir in Kalamata olives and warm for one minute, then sprinkle with crumbled feta before serving.
  • For Spicy Mango Salsa: Combine diced mango, minced red onion, minced jalapeño, chopped cilantro, and lime juice in a bowl, then spoon over the skillet dinner before serving.
