  • 3 large Russet potatoes, diced
  • 1/2 yellow onion, finely chopped
  • 1 bell pepper (any color), diced
  • 1/2 pound breakfast sausage, crumbled
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Hot sauce (optional, for serving)

Cooking Steps

  • Heat olive oil in a large, oven-safe skillet over medium-high heat.
  • Add diced potatoes and cook until tender and lightly browned, about 10-15 minutes.
  • Push potatoes aside, add crumbled breakfast sausage, and cook until browned, about 5-7 minutes; drain excess grease.
  • Stir in chopped onion and bell pepper with potatoes and sausage, cooking until vegetables are tender-crisp, about 5-7 minutes; season with salt and pepper.
  • Create four indentations in the mixture and crack one egg into each well.
  • Bake in a preheated oven at 375°F (190°C) for 8-12 minutes, until egg whites are set and yolks reach desired runniness.
  • Sprinkle shredded cheddar cheese over the skillet during the last 2-3 minutes of baking.
  • Carefully remove the skillet from the oven and garnish with fresh chopped parsley.
  • Serve hot directly from the skillet, optionally with hot sauce.

Notes

For crispier potatoes, avoid overcrowding the skillet and cook in batches if necessary. The cooking time for eggs can vary depending on your oven and desired yolk consistency.
