  • 8 ounces, sliced Cremini Mushrooms
  • 1 large, thinly sliced Yellow Onion
  • 1.5 cups, shredded Monterey Jack Cheese

Sauce Ingredients

  • 2 tablespoons, divided Olive Oil
  • 2 tablespoons Butter
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Dried Thyme
  • Salt & Black Pepper To taste
  • 0.25 cup Chicken Broth or White Wine (optional)

Preparation

  • Pat chicken breasts dry and mix garlic powder, onion powder, paprika, dried thyme, salt, and pepper in a small bowl. Rub the spice mixture generously over both sides of the chicken breasts.
  • Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Sear the seasoned chicken for 4-5 minutes per side until golden brown, then remove and set aside.

Cooking

  • Reduce heat to medium, add remaining olive oil and butter to the skillet. Cook sliced onions for 8-10 minutes until softened, then add sliced mushrooms and cook for another 5-7 minutes until tender and browned.
  • If using, pour in chicken broth or white wine to deglaze the pan, scraping up browned bits, and cook for 1-2 minutes until the liquid mostly evaporates.

Assembly and Baking

  • Preheat oven to 375°F (190°C). Return seared chicken to the skillet (or transfer to a baking dish), nestling it in the mushroom and onion mixture, and spoon more mixture over each chicken breast.
  • Evenly sprinkle shredded Monterey Jack cheese over each chicken breast.
  • Bake for 15-20 minutes until chicken is cooked through (165°F/74°C internal temperature) and cheese is melted, bubbly, and lightly golden.
  • Carefully remove from oven and let rest for 5 minutes before serving to ensure moist and tender chicken.

Notes

For extra flavor, consider marinating the chicken breasts for at least 30 minutes (or up to overnight) in a little olive oil and a dash of Worcestershire sauce before applying the dry rub. This will help tenderize the chicken and add another layer of savory depth to the dish.
