This classic comfort food meatloaf is a hearty and flavorful dish, perfect for a comforting family meal. Made with a blend of ground beef, breadcrumbs, and seasonings, it's topped with a tangy ketchup glaze.

Ingredients
  

Meatloaf

  • 2 lbs Ground Beef (80/20 lean-to-fat ratio)
  • 1 cup Breadcrumbs (Panko or regular)
  • 1 Egg large
  • 1/2 cup Milk
  • 1 Onion finely diced
  • 2 cloves Garlic minced
  • 1/4 cup Ketchup
  • 1 tablespoon Worcestershire Sauce
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Dried Herbs (such as oregano, thyme, or Italian seasoning)
  • 1 tablespoon Oil (for sautéing aromatics)

Glaze

  • 1/2 cup Ketchup
  • 2 tablespoons Mustard (Dijon or yellow)
  • 2 tablespoons Brown Sugar

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a loaf pan or baking sheet.
  • In a large bowl, combine egg and milk then add breadcrumbs and let them soak for 5 minutes.
  • Sauté diced onion in oil until softened, then add minced garlic and cook for another minute; let the mixture cool.
  • Combine the cooled onion and garlic mixture, ground beef, 1/4 cup ketchup, Worcestershire sauce, salt, pepper, and dried herbs with the breadcrumb mixture and mix gently until just combined.
  • Transfer the meatloaf mixture to the prepared pan and shape it into an even loaf.

Cooking

  • Whisk together the remaining 1/2 cup ketchup, mustard, and brown sugar for the glaze until smooth.
  • Spread two-thirds of the glaze over the meatloaf and bake for 50-60 minutes.
  • Remove the meatloaf, apply the remaining glaze, and bake for another 10-15 minutes until it reaches an internal temperature of 160°F (71°C).
  • Let the meatloaf rest for 10-15 minutes before slicing and serving.

Notes

For extra flavor, try adding a pinch of red pepper flakes to the glaze. Leftover meatloaf makes great sandwiches!
