  • 1 small shallot, finely minced
  • 1/4 cup fresh parsley, chopped (flat-leaf Italian parsley works best)
  • 2 tablespoons fresh chives, finely snipped
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (or to taste)
  • 1 tablespoon fresh squeezed lemon juice
  • 1 teaspoon Worcestershire sauce
  • Salt to taste
  • Freshly ground black pepper to taste

  • Melt the unsalted butter in a small saucepan or skillet over medium-low heat, ensuring it gently bubbles without browning too quickly.
  • Add the minced garlic and shallot to the melted butter and cook for 2-3 minutes until fragrant and softened.
  • Stir in the smoked paprika and cayenne pepper, cooking for one more minute to allow the spices to bloom.
  • Remove the pan from heat, then whisk in the Dijon mustard, fresh lemon juice, and Worcestershire sauce until fully combined.
  • Finally, stir in the fresh parsley and chives, then season with salt and freshly ground black pepper to your liking.
  • Transfer the cowboy butter to a small serving bowl and serve warm to maintain its luscious, dippable consistency.

Notes

For an extra kick, you can add a pinch more cayenne pepper. This sauce is incredibly versatile and can be used on anything from grilled meats to roasted vegetables.
