Creamy Cashew-Spinach Dip with Crudités

Ingredients
  

Dip

  • 1 ½ cups raw cashews soaked in hot water for at least 30 minutes, then drained
  • ½ cup fresh spinach packed
  • ¼ cup nutritional yeast
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic minced
  • ½ teaspoon onion powder
  • ¼ teaspoon salt or to taste
  • teaspoon black pepper or to taste
  • cup water or more, gradually, to reach desired consistency

For Serving

  • Assorted fresh vegetables for dipping (e.g., cucumber slices, carrot sticks, bell pepper strips, cherry tomatoes)

Instructions
 

Preparation

  • Combine the soaked cashews, spinach, nutritional yeast, lemon juice, minced garlic, onion powder, salt, and black pepper in a high-speed blender or food processor.
  • Add ⅓ cup of water to the blender and blend until completely smooth and creamy, scraping down the sides as needed.
  • If the dip is too thick, add more water, one tablespoon at a time, until you reach your desired consistency.
  • Taste and adjust seasonings as necessary, adding more salt, pepper, or lemon juice if desired.

Serving

  • Transfer the dip to a serving bowl, then arrange the assorted fresh vegetables around the dip on a platter.
  • Serve immediately or cover and refrigerate until ready to serve.

Notes

For extra flavor, you can roast the garlic before mincing. Store leftover dip in an airtight container in the refrigerator for up to 3-4 days.
