Ingredients
  

For the Chicken & Sauce Base:

  • 1.5 pounds chicken breasts or thighs boneless, skinless, cut into bite-sized pieces
  • 4 cups chicken broth low-sodium recommended
  • 1 can condensed cream of chicken soup 10.5-ounce
  • 1 medium onion diced
  • 2 stalks celery diced
  • 3 medium carrots diced
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt to taste
  • black pepper to taste
  • 1/2 cup heavy cream optional, for extra richness

For the Delicious Dumplings:

  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk whole or 2%
  • 1/4 cup butter melted

Instructions
 

Preparing the Chicken Base:

  • Combine chicken, vegetables, garlic, broth, cream of chicken soup, herbs, salt, and pepper in the slow cooker.
  • Stir all ingredients thoroughly to ensure even mixing.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is tender.

Whipping Up the Dumplings:

  • While chicken cooks, whisk together flour, baking powder, and salt in a bowl for the dumplings.
  • Add milk and melted butter to the dry ingredients, stirring just until combined; avoid overmixing.

Adding the Dumplings & Finishing:

  • Remove cooked chicken from the slow cooker, shred or cut into smaller pieces, then return it to the slow cooker.
  • Drop spoonfuls of dumpling dough onto the simmering chicken mixture.
  • Cover and cook on high for 20-30 minutes, until dumplings are cooked and fluffy.
  • Optionally, stir in heavy cream for richness, then taste and adjust seasoning.

Notes

For a healthier option, use low-sodium chicken broth. When making the dumpling dough, be careful not to overmix; the dough will be shaggy. For extra richness, stir in heavy cream at the end, and always taste and adjust seasonings before serving.
