  • 2 medium chicken breasts, cooked and shredded
  • 4 cups chicken broth
  • 15 ounces black beans, rinsed and drained
  • 15 ounces corn, drained
  • 10 ounces diced tomatoes with green chilies, undrained
  • 1 packet taco seasoning mix
  • 8 ounces cream cheese, softened
  • 1 cup milk or half-and-half

  • In a large pot, combine shredded chicken, chicken broth, black beans, corn, and diced tomatoes with green chilies. Stir in the taco seasoning.
  • Bring the mixture to a simmer over medium heat.
  • Reduce heat to low, add the softened cream cheese, and stir until completely melted and smooth.
  • Gradually whisk in the milk or half-and-half until the soup reaches your desired creamy consistency. Heat through, but do not boil.
  • Serve hot and garnish with your favorite taco toppings.

Notes

For extra flavor, you can sauté chopped onions and garlic before adding the other ingredients. This soup is also great with a squeeze of lime juice at the end.
