This creamy Crockpot Chicken Alfredo is an easy and delicious meal, perfect for a weeknight dinner. Tender chicken in a rich, cheesy sauce is tossed with your favorite pasta.

Ingredients
  

Chicken

  • 1.5-2 pounds Boneless, skinless chicken breasts

Sauce

  • 8 ounces Cream cheese softened
  • 1/2 cup Unsalted butter
  • 4-6 cloves Garlic minced
  • 1 tablespoon Italian seasoning
  • Salt To taste
  • Black pepper To taste
  • 1/2 cup Chicken broth
  • 1.5 cups Heavy cream
  • 1 cup Parmesan cheese freshly grated

Pasta & Garnish

  • 12-16 ounces Fettuccine or pasta of choice cooked
  • Fresh parsley For garnish (optional)

Cooking

  • Lightly grease the inside of your slow cooker, then place the chicken breasts in an even layer at the bottom.
  • In a bowl, whisk cream cheese, butter, garlic, Italian seasoning, salt, pepper, and chicken broth; pour over chicken.
  • Cover and cook on low for 3-4 hours or on high for 2-3 hours until chicken is cooked through and shreds easily.
  • Remove and shred chicken, then return it to the slow cooker.
  • Stir in heavy cream and Parmesan cheese, then cook on high for 15-30 minutes until the sauce is hot, bubbly, and slightly thickened.
  • Add cooked pasta and toss to coat everything evenly.
  • Ladle into bowls, garnish with fresh parsley if desired, and enjoy.

Notes

For best results, use freshly grated Parmesan cheese. If you prefer a thinner sauce, you can add a little more chicken broth or heavy cream. This recipe is also great with other pasta shapes like penne or rigatoni.
