  • 1 cup chicken broth low-sodium
  • 1/2 cup heavy cream or half-and-half
  • 1/2 cup Parmesan cheese freshly grated, plus extra for garnish

  • 1 tablespoon cornstarch optional
  • salt to taste
  • black pepper to taste

Cooking Steps

  • Pat chicken dry and season generously with salt, pepper, and Italian seasoning.
  • Place seasoned chicken in a single layer at the bottom of the slow cooker.
  • Whisk together chicken broth, heavy cream, minced garlic, and Parmesan cheese in a bowl.
  • Pour the sauce evenly over the chicken in the slow cooker.
  • Cook on LOW for 4-6 hours or HIGH for 2-3 hours until chicken is cooked through and shreds easily.
  • To thicken the sauce, remove chicken, make a cornstarch slurry, and stir it into the sauce; cook on high for 15-20 minutes until thickened.
  • Return shredded chicken to the sauce or serve whole, then garnish with extra Parmesan and fresh herbs.

Notes
