  • 1.5-2 lbs boneless, skinless chicken breasts or thighs
  • 1 tbsp olive oil
  • 1 cup chicken broth low sodium
  • 1/2 cup sun-dried tomatoes packed in oil, drained and thinly sliced
  • 3-4 cloves garlic minced
  • 1 tsp dried Italian seasoning
  • 1/4 tsp red pepper flakes optional
  • Salt and black pepper to taste
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese freshly grated
  • 1/4 cup fresh basil chopped, for garnish

Preparation

  • Pat the chicken dry with paper towels and season generously with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat, sear the chicken for 2-3 minutes per side until lightly golden, then transfer it to the slow cooker.
  • In a medium bowl, whisk together the chicken broth, sun-dried tomatoes, minced garlic, Italian seasoning, and red pepper flakes.
  • Pour the broth mixture over the chicken in the slow cooker, cover, and cook on LOW for 3-4 hours or on HIGH for 2-2.5 hours, until the chicken is cooked through.
  • Once cooked, you can remove and shred the chicken into bite-sized pieces and return it to the slow cooker, or leave it whole.
  • Stir in the heavy cream and grated Parmesan cheese, then continue to cook for another 15-20 minutes on LOW until the sauce is heated through and slightly thickened.
  • Taste and adjust seasonings, then garnish generously with fresh chopped basil before serving.

Notes

For best results, browning the chicken before slow cooking adds a deeper flavor. Adjust red pepper flakes to your preferred spice level. Serve over pasta, rice, or with a side of crusty bread to soak up the delicious sauce.
