Creamy Dream Marry Me Chicken Soup

  • 1 ½ lbs boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth low sodium
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes packed in oil, drained and chopped
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh basil or parsley Optional for serving

Instructions
 

Cooking Steps

  • Pat chicken dry, season with salt and pepper, then sear in 1 tbsp olive oil for 3-4 minutes per side until golden. Remove, cool slightly, and then shred or dice.
  • Reduce heat to medium, add remaining 1 tbsp olive oil, and cook diced onion for 5-7 minutes until translucent. Stir in minced garlic and Italian seasoning, cooking for another minute until fragrant.
  • Pour in chicken broth, scraping any browned bits from the pot, and bring to a simmer.
  • Stir in chopped sun-dried tomatoes and return the shredded/diced chicken to the pot.
  • Reduce heat to low, stir in heavy cream and Parmesan, cooking gently for 5-7 minutes until cheese melts and soup thickens slightly. Do not boil after adding cream.
  • Remove from heat, add fresh spinach, and stir until it wilts into the soup.
  • Taste and adjust seasonings. Ladle into bowls and garnish with fresh basil, parsley, or extra Parmesan if desired.

Notes

For a spicier kick, add a pinch of red pepper flakes with the garlic and Italian seasoning. You can also use pre-cooked rotisserie chicken to save on prep time; simply add it to the soup at the same time as the sun-dried tomatoes.
