  • 2-3 pounds boneless, skinless chicken breasts or thighs
  • 1 ounce packet dry ranch seasoning mix
  • 8 ounces cream cheese, softened
  • 1/2 cup chicken broth

For Thickening (Optional)

  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

  • Place the chicken breasts or thighs at the bottom of your slow cooker insert.
  • Whisk together the softened cream cheese, dry ranch seasoning mix, and chicken broth until well combined and smooth in a medium bowl.
  • Pour the ranch mixture evenly over the chicken in the slow cooker, ensuring all the chicken is coated.
  • Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken shreds easily.
  • Remove the cooked chicken from the slow cooker and shred it using two forks.
  • If a thicker sauce is desired, whisk together cornstarch and cold water to form a slurry, then stir it into the remaining sauce in the slow cooker. Turn the heat to high and cook for 15-20 minutes, or until the sauce has thickened.
  • Add the shredded chicken back into the thickened sauce and stir to coat thoroughly. Serve immediately and enjoy!

Notes

For extra flavor, you can brown the chicken before adding it to the slow cooker, but it's not necessary. This recipe can be easily doubled for a larger crowd. Serve over rice, pasta, or with mashed potatoes for a complete meal.
