  • 4 sweet potatoes medium, peeled and thinly sliced
  • 1/2 cup unsalted butter melted
  • 4 cloves garlic minced
  • 1 1/2 cups heavy cream
  • 1/2 cup Parmesan cheese grated
  • 2 tbsp fresh parsley chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • In a large bowl, whisk together the melted butter, minced garlic, heavy cream, salt, and black pepper.
  • Add the sliced sweet potatoes to the cream mixture, tossing gently to ensure all slices are evenly coated.

Bake

  • Arrange the sweet potato slices in the prepared baking dish in an even layer. Pour any remaining cream mixture over the potatoes.
  • Bake for 30 minutes, then remove from the oven and sprinkle with grated Parmesan cheese.
  • Return to the oven and continue baking for another 25-30 minutes, or until the sweet potatoes are tender and the top is golden brown and bubbly.

Serve

  • Garnish with fresh chopped parsley before serving hot.

Notes

For extra flavor, you can add a pinch of cayenne pepper to the cream mixture. This dish can be prepared ahead of time and reheated. Cover with foil when reheating to prevent drying out.
