  • 1 medium head cauliflower chopped into florets
  • 2 tbsp butter
  • 2 cloves garlic minced
  • 1/4 cup heavy cream
  • 2 oz cream cheese softened
  • 1/4 cup Parmesan cheese grated
  • 2 tbsp fresh chives chopped
  • Salt and black pepper to taste

  • Steam or boil the cauliflower florets until they are very tender, then drain them extremely well to remove excess water.
  • While the cauliflower cooks, melt butter in a saucepan, add minced garlic, and cook for 1 minute until fragrant.
  • In a large bowl, combine the drained cauliflower, garlic butter, heavy cream, softened cream cheese, and Parmesan cheese.
  • Mash the mixture until smooth and creamy using a potato masher or an immersion blender.
  • Stir in the chopped fresh chives and season generously with salt and black pepper.
  • Serve the creamy garlic and herb cauliflower mash hot as a comforting side to any keto meal.

Notes

For an extra rich flavor, roast the cauliflower florets instead of steaming or boiling them. You can also adjust the amount of garlic and herbs to your preference.
