  • 1 lb (500g) potato gnocchi
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup (120ml) vegetable broth
  • 1 cup (240ml) heavy cream
  • 1/2 cup (120ml) milk
  • 5 oz (150g) fresh spinach
  • 4 oz (115g) feta cheese, crumbled
  • Salt to taste
  • Freshly ground black pepper to taste
  • Pinch red pepper flakes optional
  • Fresh parsley or basil optional, for garnish

Cooking Steps

  • Cook gnocchi in salted boiling water according to package directions until they float to the surface, then drain and set aside.
  • Heat olive oil in a large skillet over medium heat, then sauté minced garlic and optional red pepper flakes for about 1 minute until fragrant.
  • Pour in vegetable broth, heavy cream, and milk, bringing the mixture to a gentle simmer for 3-5 minutes to thicken the sauce.
  • Stir in fresh spinach a handful at a time until all of it has wilted into the sauce.
  • Add the cooked gnocchi to the skillet and toss to coat, then stir in half of the crumbled feta cheese.
  • Season with salt and freshly ground black pepper to taste, then serve immediately garnished with the remaining feta and fresh herbs if desired.

Notes

Taste the dish before adding salt, as feta cheese is already quite salty. For an extra kick, don't skip the red pepper flakes!
