  • 1 tbsp Olive Oil
  • ½ Large White Onion
  • 4 cloves Garlic
  • ½ cup Sun-Dried Tomatoes packed in oil, drained & chopped
  • 1 tsp Italian Seasoning
  • ½ tsp Red Pepper Flakes optional, or to taste
  • 4 cups Chicken Broth or vegetable broth
  • 1 cup Half & Half or heavy cream for richer sauce
  • ½ cup Grated Parmesan Cheese plus more for serving
  • 18-20 oz Fresh or Frozen Cheese Tortellini
  • 2 cups Fresh Baby Spinach
  • Salt & Black Pepper to taste
  • Fresh Parsley for garnish

Instructions
 

Preparation

  • Heat olive oil in a large skillet or Dutch oven over medium heat. Sauté diced onion for 5-7 minutes until softened and translucent.
  • Stir in minced garlic, chopped sun-dried tomatoes, Italian seasoning, and red pepper flakes, then cook for 1-2 minutes until fragrant.

Cooking

  • Pour in the chicken broth and bring to a simmer, cooking for about 5 minutes to meld the flavors.
  • Reduce heat to low, stir in half & half and Parmesan cheese, whisking until melted and the sauce is smooth and slightly thickened.
  • Add tortellini directly to the simmering sauce and cook according to package directions until al dente, ensuring it is submerged.
  • Once tortellini is cooked, stir in fresh baby spinach for 1-2 minutes until wilted into the sauce.

Serving

  • Ladle the tortellini into bowls and garnish with extra grated Parmesan cheese and fresh chopped parsley. Serve immediately.

Notes

For a richer sauce, use heavy cream instead of half & half. Adjust red pepper flakes to your preferred spice level. Taste and adjust seasoning with salt and pepper as you go.
