  • 1 tbsp olive oil
  • 1 small yellow onion finely diced
  • 3 garlic minced
  • 1/2 tsp red pepper flakes optional
  • 1 can crushed tomatoes (28 ounce)
  • 1 cup chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese plus more for serving
  • 1 tsp dried oregano
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 1 package refrigerated or frozen cheese tortellini (20 ounce)
  • 2 cups fresh spinach
  • Fresh basil leaves for garnish (optional)

  • Heat olive oil in a large skillet over medium heat, then add the diced onion and cook for 5-7 minutes until soft.
  • Stir in minced garlic and red pepper flakes and cook for one minute until fragrant.
  • Pour in crushed tomatoes and broth, add oregano, salt, and pepper, then simmer covered for 15 minutes to blend flavors.
  • Uncover, stir in heavy cream and Parmesan, and simmer for 5 minutes until the sauce slightly thickens and cheese melts.
  • Add tortellini directly to the sauce, stir to submerge, and cook for 5-8 minutes until tender.
  • Remove from heat, add fresh spinach, and stir until it wilts from the residual heat.
  • Adjust seasonings, then serve immediately garnished with extra Parmesan and fresh basil.

Notes

For a richer sauce, use a full-fat broth. You can easily adjust the spice level by adding more or fewer red pepper flakes to suit your taste. If using frozen tortellini, there's no need to thaw them beforehand; just add them directly to the simmering sauce and adjust cooking time if needed.
