Creamy Mushroom Slow Cooker Chicken and Dumplings

  • 1.5 lbs boneless, skinless chicken thighs (or breasts)
  • 1 tbsp olive oil (optional, for searing)
  • 1 large onion chopped
  • 2 carrots peeled and chopped
  • 2 celery stalks chopped
  • 8 oz cremini mushrooms sliced
  • 1 (10.5 oz) can condensed cream of mushroom soup (or cream of chicken)
  • 4 cups low-sodium chicken broth
  • 1/4 cup dry white wine (or extra chicken broth)
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and freshly ground black pepper to taste
  • 1 (16.3 oz) can refrigerated biscuit dough (e.g., Pillsbury Grands!) cut into quarters
  • Fresh parsley chopped, for garnish (optional)

Preparation

  • Optionally, sear the chicken thighs in olive oil for 2-3 minutes per side until lightly browned, then transfer to the slow cooker.
  • Scatter the chopped onion, carrots, celery, and sliced mushrooms over the chicken, then sprinkle with thyme, garlic powder, onion powder, salt, and pepper.
  • Whisk together the condensed cream of mushroom soup, chicken broth, and white wine in a separate bowl, then pour this mixture over the chicken and vegetables.
  • Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours until the chicken is very tender.
  • Remove the cooked chicken, shred it with two forks, and return it to the slow cooker, stirring to combine.
  • Cut each refrigerated biscuit into four quarters and drop them into the hot liquid in the slow cooker, ensuring they are mostly submerged.
  • Recover the slow cooker and continue to cook on HIGH for 30-60 minutes, or until the dumplings are cooked through and fluffy, avoiding lifting the lid.
  • Taste and adjust seasoning, then ladle into bowls and garnish with fresh chopped parsley if desired.

Notes

For a richer flavor profile, do not skip searing the chicken, although it is optional. Using low-sodium broth allows for better control over the overall saltiness of the dish. Adjust seasoning as needed before serving.
