  • 1 tbsp olive oil
  • 1 lb lean ground turkey 93% lean or higher
  • 1 large yellow onion chopped
  • 3 cloves garlic minced
  • 8 oz sliced mushrooms
  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 5 oz fresh spinach
  • 4 oz cream cheese softened, cut into cubes (or 1/4 cup heavy cream)

Cooking Steps

  • Heat olive oil in a large skillet over medium-high heat, then brown the ground turkey, breaking it apart, until no longer pink.
  • Drain excess fat, set aside the turkey, and then add chopped onion and sliced mushrooms to the skillet, cooking until softened.
  • Stir in minced garlic for one minute until fragrant, then add the rice and toast it lightly for about a minute.
  • Pour in the broth, add salt, pepper, and thyme, then bring the mixture to a boil.
  • Return the cooked turkey to the skillet, stir to combine, then reduce heat, cover, and simmer for 15-20 minutes until the rice is tender and liquid is absorbed.
  • Stir in fresh spinach until wilted, then add softened cream cheese cubes and stir gently until melted and creamy.
  • Remove from heat, cover, and let rest for 5 minutes; fluff with a fork before serving.

Notes

Avoid frequently lifting the lid while the rice is simmering to ensure even cooking and absorption of liquid. For an extra touch of flavor, you can garnish with fresh parsley or grated Parmesan cheese before serving.
