  • 1.5 to 2 pounds Salmon fillets skin-on or off
  • Olive oil For searing and sautéing
  • 4-5 cloves Garlic minced
  • ½ cup Sun-dried tomatoes packed in oil, drained and chopped
  • 5-6 ounces Fresh spinach
  • 1 cup Heavy cream
  • ½ cup Chicken or vegetable broth
  • ½ cup Parmesan cheese freshly grated
  • Salt To taste
  • Freshly ground black pepper To taste
  • Fresh basil or parsley For garnish

Cooking Steps

  • Pat the salmon fillets dry and season generously with salt and pepper.
  • Sear the salmon in olive oil in a large skillet for 4-5 minutes skin-side down, then flip and sear for 2-3 minutes more; remove and set aside.
  • Add a splash of olive oil to the same skillet, then sauté the minced garlic for about 1 minute until fragrant.
  • Stir in the chopped sun-dried tomatoes and cook for 2 minutes, then add the fresh spinach and cook until wilted (2-3 minutes).
  • Pour in the heavy cream and broth, bring to a simmer, then stir in the Parmesan cheese until melted and the sauce is smooth; season with salt and pepper.
  • Nestle the seared salmon fillets back into the sauce and simmer gently for 2-3 minutes to finish cooking and absorb flavors.
  • Garnish generously with fresh basil or parsley and serve immediately.

Notes

For best results, use a cast iron or stainless steel skillet for proper searing. Ensure not to overcook the salmon during the initial searing, as it will finish cooking in the sauce. Adjust seasonings according to your preference.
