  • 14 ounces smoked sausage sliced
  • 12 ounces pasta fettuccine or similar
  • 1.5 cups heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup Parmesan cheese grated
  • 2 cloves garlic minced
  • 1 onion small, chopped
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

  • fresh parsley chopped

Cooking Steps

  • Cook pasta according to package directions, then drain and set aside, reserving 1/2 cup of pasta water.
  • Heat olive oil in a large skillet over medium heat, then add sliced sausage and cook until browned; remove sausage and set aside.
  • Add chopped onion to the skillet and cook until softened, then add minced garlic and cook for another minute until fragrant.
  • Pour in chicken broth and heavy cream, bring to a simmer, then stir in Parmesan cheese until melted and the sauce is smooth.
  • Return cooked sausage and pasta to the skillet, tossing to coat everything evenly with the sauce; if the sauce is too thick, add some reserved pasta water.
  • Season with salt and pepper to taste, then serve immediately, garnished with fresh parsley if desired.

Notes

For extra flavor, you can add a pinch of red pepper flakes to the sauce. This dish is best served immediately.
