  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon dried rosemary (or 1 tsp fresh, chopped)
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper or to taste

Instructions
 

Preparation

  • Place clean potatoes in a large pot, cover with cold water, and add a pinch of salt.
  • Bring to a boil, then simmer for 15-20 minutes until fork-tender.

Draining and Cooling

  • Drain the potatoes well and let them steam dry in the colander for a few minutes.

Preheat Oven & Prep Sheet

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Smash Potatoes

  • Arrange boiled potatoes on the baking sheet and gently press each one to about 1/2-inch thick using a sturdy glass or masher.

Seasoning

  • Whisk together olive oil, garlic powder, rosemary, salt, and pepper in a small bowl.
  • Drizzle or brush this mixture evenly over the smashed potatoes, ensuring full coating.

Baking

  • Bake for 30-40 minutes, flipping halfway, until golden brown and crispy.
  • For extra crispiness, broil for the last 2-3 minutes, watching carefully to prevent burning.

Serving

  • Remove from oven, garnish with fresh herbs or Parmesan if desired, and serve immediately.

Notes

For even crispier results, ensure potatoes are thoroughly dry before smashing and roasting. Don't overcrowd the baking sheet to allow for optimal browning. Feel free to experiment with other herbs like fresh thyme or oregano for different flavor profiles.
