  • 1 medium head fresh broccoli chopped into small florets
  • 1 cup shredded cheddar cheese sharp or mild
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour plus extra for dredging
  • 2 large eggs whisked
  • 1 cup Panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • 1-2 inches Vegetable oil for frying (enough for about 1-2 inches in your pan)

Preparation

  • Steam or blanch the broccoli florets until tender-crisp, then drain well and let cool. Finely chop or mash the cooled broccoli into small pieces.
  • In a large bowl, combine the chopped broccoli, cheddar cheese, Parmesan cheese, 1/2 cup flour, garlic powder, onion powder, salt, and pepper; mix well to bind the ingredients.
  • Roll about 1 tablespoon of the mixture into firm balls; repeat until all mixture is used, yielding approximately 20-25 balls.
  • Set up a dredging station with three shallow dishes: one with extra flour, one with whisked eggs, and one with Panko breadcrumbs.
  • Dredge each ball first in flour, then in egg, and finally generously coat in Panko breadcrumbs, pressing gently for a good coating.

Cooking

  • Heat 1-2 inches of vegetable oil in a large, heavy-bottomed skillet or Dutch oven over medium-high heat to 350°F (175°C).
  • Carefully place a few broccoli cheese balls into the hot oil, avoiding overcrowding, and fry for 3-4 minutes, turning until golden brown and crispy.
  • Remove fried balls with a slotted spoon and drain on a paper towel-lined plate before serving immediately.

Notes

For extra flavor, consider adding a pinch of red pepper flakes to the broccoli mixture. These balls are best served fresh and hot.
