Ingredients
  

For the Dough:

  • 1 cup almond flour, superfine
  • 2 tablespoons coconut flour
  • 1 teaspoon xanthan gum
  • 1/4 teaspoon salt
  • 1/4 cup erythritol or monk fruit sweetener blend
  • 2 tablespoons unsalted butter, melted
  • large egg
  • 1 teaspoon vanilla extract

For the Filling:

  • 4 ounces cream cheese, softened
  • 2 tablespoons erythritol or monk fruit sweetener blend
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract

For the Topping (Optional):

  • Powdered erythritol or monk fruit sweetener for dusting

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, combine almond flour, coconut flour, xanthan gum, salt, and sweetener.
  • Whisk melted butter, egg, and vanilla in a separate bowl, then mix with dry ingredients to form a dough.
  • Roll the dough between two pieces of parchment paper into an 8x10-inch rectangle of even thickness.

Assembly & Baking

  • Beat softened cream cheese, sweetener, cinnamon, and vanilla until smooth for the filling.
  • Spread the cream cheese filling evenly over the dough, leaving a small border on one long edge.
  • Carefully roll the dough into a tight log, starting from the border-free long edge.
  • Slice the log into 12-14 pieces, about 1 inch thick, and place them cut-side up on the baking sheet.
  • Bake for 18-22 minutes until golden brown and the filling is set.
  • Cool on the baking sheet, then transfer to a wire rack to firm up; dust with powdered sweetener if desired before serving.

Notes

The dough might seem crumbly at first, but keep kneading gently and it will come together. If the dough cracks while rolling, simply press it back together. For extra crispiness, ensure the roll-ups cool completely on a wire rack.
