  • 2 Salmon Fillets (4-6 ounces each), skin-on
  • 1-2 tablespoons Olive Oil or Avocado Oil
  • 1/2 teaspoon Salt (Kosher or sea salt)
  • 1/4 teaspoon Black Pepper freshly ground

For Garnish

  • Lemon Wedges For serving
  • 1 tablespoon Fresh Dill or Parsley chopped

Preparation

  • Pat the salmon fillets dry with paper towels, especially the skin side, for crispy skin.

Cooking

  • Season both sides of the salmon generously with salt and black pepper.
  • Heat a heavy-bottomed, oven-safe skillet over medium-high heat with 1-2 tablespoons of olive oil.
  • Place salmon skin-side down, pressing gently for even contact, and cook undisturbed for 4-6 minutes until the skin is golden brown and crisp.
  • Flip the salmon and cook for another 2-4 minutes on the flesh side until it flakes easily or reaches 145°F/63°C.

Serving

  • Remove the salmon from the pan, let it rest for a minute or two, then garnish with lemon wedges and chopped dill or parsley.

Notes

For extra flavor, you can add a clove of crushed garlic or a pat of butter to the pan during the last minute of cooking the flesh side.
