  • 1 cup full-fat cottage cheese
  • 1 tablespoon cornstarch or arrowroot powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • Pinch salt to taste
  • Freshly ground black pepper a touch
  • 1 tablespoon finely chopped fresh chives or dried parsley Optional

Instructions
 

Preparation

  • Drain cottage cheese thoroughly in a fine-mesh sieve lined with coffee filter or cheesecloth for 30-60 minutes in the fridge, pressing gently to remove excess liquid.
  • Combine drained cottage cheese, cornstarch, garlic powder, onion powder, smoked paprika, salt, and black pepper in a medium bowl; stir in chives or parsley if desired, mixing gently to combine.
  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat.

Cooking

  • Drop small spoonfuls (1-2 teaspoons) of the cottage cheese mixture onto the prepared baking sheet, leaving space between each.
  • Using a spoon or lightly oiled finger, flatten each dollop into a thin, round chip shape, about 1/8 to 1/4 inch thick.
  • Bake for 15-20 minutes, or until the edges are golden brown and the chips are firm to the touch.
  • For extra crispiness, carefully flip the chips halfway through baking and continue baking until golden and fully dry.

Cooling

  • Remove from oven and let chips cool completely on the baking sheet; they will become significantly crispier as they cool.

Notes

For best results, ensure the cottage cheese is thoroughly drained to achieve maximum crispiness. Experiment with different spices to customize the flavor to your liking. These chips are a great alternative to traditional potato chips and can be stored in an airtight container for a few days.
