  • 1 lb ground beef
  • 1 medium onion chopped
  • 2 celery stalks chopped
  • 2 carrots chopped
  • 3 medium potatoes peeled and diced
  • 4 cups beef broth
  • 1 14.5 oz can canned diced tomatoes undrained
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper

For Creaminess

  • 8 oz cream cheese softened and cubed
  • 2 cups cheddar cheese shredded
  • 0.5 cup milk
  • 2 tbsp all-purpose flour

Preparation

  • Brown the ground beef in a skillet, then drain any excess fat and transfer it to the crockpot.
  • Add the chopped onion, celery, carrots, and diced potatoes to the crockpot with the beef.

Cooking

  • Pour in the beef broth and diced tomatoes, then stir in the basil, oregano, salt, and pepper.
  • Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the vegetables are tender.
  • In a small bowl, whisk together the milk and flour until smooth, then stir this mixture into the soup along with the cream cheese.
  • Continue cooking, stirring occasionally, until the cream cheese is melted and the soup is slightly thickened.
  • Stir in the shredded cheddar cheese until it is melted and fully incorporated into the soup.

Serving

  • Serve hot, garnished with your favorite cheeseburger toppings like pickles, diced tomatoes, or extra cheese.

Notes

For a richer flavor, consider using a combination of ground beef and ground sausage. Adjust seasonings to your preference, and feel free to add other vegetables like corn or peas. This soup freezes well for future meals.
