  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch cubes
  • 2 lemons juiced and zested
  • 1/4 cup olive oil
  • 2 garlic minced
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Preparation

  • In a medium bowl, whisk together lemon juice, lemon zest, olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper to create the marinade.
  • Add the cubed chicken to the marinade, ensuring all pieces are well coated, then cover and refrigerate for at least 30 minutes, or up to 4 hours, for best flavor.
  • If using wooden skewers, remember to soak them in water for at least 30 minutes to prevent them from burning on the grill.

Cooking

  • Preheat your grill to medium-high heat.
  • Thread the marinated chicken pieces onto the skewers.
  • Grill the chicken skewers for 8-12 minutes, turning occasionally, until the chicken is cooked through and has nice char marks.
