  • 12 ounces Silken Tofu about 1 ¾ cups
  • 8 ounces Dark Chocolate 60-70% cacao
  • ¼ cup Unsweetened Cocoa Powder
  • ¼ cup Maple Syrup or agave nectar
  • 1 teaspoon Vanilla Extract
  • Salt Pinch

Preparation

  • Melt the dark chocolate in a double boiler or microwave, stirring until smooth.
  • Gently drain any excess water from the silken tofu.
  • Combine drained tofu, melted chocolate, cocoa powder, maple syrup, vanilla extract, and salt in a high-speed blender or food processor.
  • Blend until the mixture is completely smooth and creamy, scraping down the sides as needed.
  • Taste and adjust sweetness by adding more maple syrup if desired, then blend again.
  • Pour the mousse into individual ramekins or glasses, cover, and refrigerate for at least 2 hours or overnight until set.
  • Serve chilled, plain or with your preferred toppings.

Notes

For best results, make sure the chocolate is fully melted and smooth before adding to the blender. Chilling overnight will yield the firmest mousse. Vary the sweetness to your preference by adjusting the amount of maple syrup.
