  • Pinch salt

Preperation

  • In a shallow dish, whisk together eggs, milk, sugar, vanilla extract, cinnamon, and salt until well combined and frothy.
  • In a small saucepan, combine mixed berries, sugar, and water. Simmer over medium heat, stirring occasionally, until the berries soften and the sauce thickens slightly (about 5-7 minutes).

Cooking

  • Heat a large non-stick skillet or electric griddle over medium heat, then add butter or cooking oil to coat the surface.
  • Dip each slice of Texas toast into the egg mixture for 10-15 seconds per side, ensuring not to oversaturate the bread.
  • Transfer the soaked toast to the hot griddle and cook for 3-4 minutes per side, or until golden brown and cooked through.
  • Remove cooked French toast to serving plates and repeat with remaining slices, adding more butter or oil as needed.

Serving

  • Dust the warm French toast generously with powdered sugar. Spoon a dollop of berry compote over each serving, and garnish with fresh mint leaves if desired.

Notes

For extra richness, use half-and-half instead of whole milk in the batter. Be careful not to oversaturate the Texas toast to prevent it from becoming soggy. Adjust the sugar in the berry compote to your taste, and add a squeeze of lemon juice to brighten the flavors.
