Delectable Dill Salmon Burgers

Ingredients
  

Salmon Patties

  • 1.5 lbs fresh salmon fillet skin removed
  • 1/2 cup panko breadcrumbs or gluten-free breadcrumbs
  • 1 large egg lightly beaten
  • 1/4 cup red onion finely chopped
  • 2 tablespoons fresh dill chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt or to taste

For Cooking and Serving

  • 2 tablespoons olive oil for cooking
  • Hamburger buns
  • lettuce
  • tomato
  • your favorite sauce for serving

Instructions
 

Prepare the Salmon

  • Pat the salmon fillet dry with paper towels. Dice 1/3 of the salmon into 1/4-inch pieces and set aside.

Process the Salmon

  • Roughly chop the remaining 2/3 of the salmon and pulse it in a food processor until finely minced, but not puréed.

Combine Ingredients

  • In a large bowl, gently combine the minced and diced salmon, panko breadcrumbs, beaten egg, red onion, dill, Dijon mustard, lemon juice, lemon zest, garlic powder, salt, and pepper.

Chill the Mixture

  • Cover and refrigerate the salmon mixture for at least 30 minutes to allow the flavors to meld and the mixture to firm up.

Form the Patties

  • Divide the chilled mixture into 4-6 equal portions and gently form each into a 3/4-inch thick patty. Make a slight indentation in the center of each.

Cook the Burgers

  • Heat olive oil in a non-stick skillet over medium heat. Cook the salmon patties for 4-5 minutes per side until golden brown and cooked through (145°F/63°C internal temperature).

Rest and Serve

  • Transfer the cooked burgers to a plate and let them rest for 2-3 minutes. Serve immediately on toasted buns with your favorite toppings like lettuce, tomato, and sauce.

Notes

For an extra burst of flavor, add a pinch of cayenne pepper to the salmon mixture. You can also grill these burgers instead of pan-frying them. If grilling, make sure the patties are firm enough to handle and brush them lightly with oil to prevent sticking. Serve with a side of sweet potato fries or a fresh green salad for a complete meal.
