  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup sun-dried tomatoes, drained and chopped
  • 0.5 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 cups fresh spinach (optional)
  • fresh basil or parsley, chopped (for garnish) optional

  • Add chicken breasts, heavy cream, chicken broth, sun-dried tomatoes, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper to the slow cooker.
  • Stir all ingredients together to combine them well.
  • Cover and cook on low for 4-6 hours or on high for 2-3 hours, or until the chicken is cooked through and tender.
  • Carefully remove the chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker.
  • If using, stir in the fresh spinach and cook for another 10-15 minutes, or until wilted.
  • Taste and adjust seasonings as needed.
  • Serve warm over cooked pasta, rice, or mashed potatoes, garnished with fresh basil or parsley if desired.

Notes

For a richer sauce, you can add 4 ounces of softened cream cheese along with the other ingredients. If the sauce is too thin, you can thicken it by mixing a tablespoon of cornstarch with a tablespoon of water and stirring it into the sauce during the last 30 minutes of cooking. This dish pairs wonderfully with a side of steamed green beans or a simple salad.
