  • 1 cup finely grated carrots about 1/2 cup once processed
  • 1 cup pitted Medjool dates
  • 1/2 cup rolled oats old-fashioned oats

Preparation

  • Wash and peel carrots, then finely grate them using a box grater or food processor until you have about 1 cup.
  • Combine grated carrots and pitted Medjool dates in a food processor and process until a sticky paste forms, scraping down sides as needed.
  • Add rolled oats to the mixture and pulse a few times until just broken down and evenly distributed.
  • Take about a tablespoon of the mixture, roll into uniform balls, and dampen hands if too sticky.
  • Place formed bites on parchment-lined plate, then refrigerate for at least 30 minutes to firm up.

Notes

For extra flavor, you can add a pinch of cinnamon or nutmeg to the mixture before processing the oats. These bites are great for meal prepping and can be stored in an airtight container in the refrigerator for up to a week.
