  • 1 lb breakfast sausage mild or sage preferred
  • 6 slices day-old bread white, challah, or potato bread
  • 2 cups shredded cheddar cheese medium or sharp
  • 6 large eggs
  • 2 cups milk whole milk for richer, 2% works fine
  • ½ tsp salt
  • ¼ tsp black pepper

  • Chopped fresh parsley or chives

Prepare the Sausage Base

  • In a large skillet, brown the breakfast sausage, breaking it up as it cooks. Drain off excess grease and set aside. Tear or cut the bread into bite-sized pieces.

Assemble the Casserole

  • Grease a 9x13 inch baking dish. Layer half of the bread, cooked sausage, and shredded cheddar cheese. Repeat with the remaining bread, sausage, and cheese.

Pour and Bake

  • Whisk together eggs, milk, salt, and pepper; pour evenly over the casserole layers. Gently press down to moisten the bread. Cover and refrigerate for at least 30 minutes, or ideally overnight.
  • Preheat oven to 350°F (175°C). Remove cover and bake for 45-55 minutes, or until golden brown and set. Let it rest for 5-10 minutes before slicing and serving.

Notes

For best results and flavor, allow the casserole to chill overnight. This lets the bread thoroughly soak up the egg mixture, ensuring a more tender and flavorful outcome.
