Meatloaf

  • 1.5 lbs ground beef 80/20 lean
  • 1 large onion finely diced
  • 3 garlic cloves minced
  • 1 large egg
  • 1/2 cup breadcrumbs Panko or regular
  • 1/4 cup milk
  • 1/2 cup ketchup divided
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon or yellow mustard
  • 1 tbsp brown sugar
  • 1 tsp salt
  • 1/2 tsp black pepper

Preparation

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or foil, or use a loaf pan for easy cleanup.
  • In a large bowl, whisk together the egg and milk.
  • Stir in the diced onion, minced garlic, 1 tablespoon of ketchup, Worcestershire sauce, salt, and pepper into the egg mixture.
  • Add the breadcrumbs and let them soak for a minute to absorb the liquid.
  • Add the ground beef to the bowl and gently mix all ingredients until just combined.

Baking

  • Transfer the mixture to the prepared baking sheet, shaping it into a free-form loaf (approx. 9x5 inches), or press into a loaf pan.
  • In a small bowl, whisk together the remaining ketchup, mustard, and brown sugar to create the glaze.
  • Spread about half of the glaze evenly over the top and sides of the meatloaf.
  • Bake for 45-50 minutes.
  • Remove the meatloaf, apply the remaining glaze, and continue baking for 10-15 minutes until the internal temperature reaches 160°F (71°C).

Serving

  • Remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving.

Notes

For best results, avoid overmixing the meatloaf mixture to keep it tender. A meat thermometer is highly recommended to ensure the meatloaf is cooked to the correct internal temperature. Serve with mashed potatoes or roasted vegetables for a complete meal.
